Kevin grew up near San Antonio, TX and began baking at 7 years old when his grandmother came up with creative ways to keep him occupied. Always restless and eager to create, Kevin would look to his grandmother (nicknamed Maw-Maw) to keep him busy with arts and crafts projects. Maw-Maw would also blindly choose recipes from her copy of The Redbook Cookbook and instruct him to create each recipe. A short walk to Maw-Maw’s chicken coop allowed Kevin to gather his own fresh eggs to use in the recipes. This sparked his passion for art, cooking, and baking.
After graduating from Le Cordon Bleu in Austin, TX, Kevin began cake decorating while working for a grocery store bakery. Since then, he has also worked as a cake artist, executive pastry chef, and bakery development consultant in Seattle, WA.
Kevin went back to his roots and created Cubes as a way to hold on to his Mexican-American heritage and rediscover recipes and traditions brought over by Maw-Maw and her family from Coahuila, Mexico. Traditional recipes with a modern twist fill the cases at Cubes Baking Co. daily.
Mayra was raised near San Diego, CA in a culture where food is used to pass down traditions, share stories, and care for one another. She became a baker because she wanted to carry on these values and make connections through food.
After graduating from culinary school, she sought opportunities to further develop her creativity.
She went on to work in restaurants and bakeries throughout Southern California and Seattle until finally landing at Cubes Baking Co. and Tres Lecheria. Aside from food, Mayra gained insight of the coffee industry and culture that surrounds
Seattle. After all, Mexican pastries are best served with a great cup of coffee. Outside of work, Mayra continues to expand her knowledge and skills in pastry while holding on to her roots and staying involved in the community. As if baking doesn't keep her busy enough, Mayra has recently launched Selva Central Glass Designs, a hand-painted glassware company that showcases the birds and plants native to Central America. Proceeds are donated to Border Kindness, an organizaiton that provides migrants, refugees, and the displaced with comprehensive services including food, shelter, clothing, and medical & legal services. Cubes Baking Co. began when Kevin started selling cube-shaped cakes from his car, a Nissan Cube. The Cube, a 4-layer cake with alternating layers of delicious cake and fillings, available in multiple flavors, was born. Cubes Baking Co. has since expanded to offer flan, chocoflan, Mexican wedding cookies, Jr. Cubes, cupCubes, and other seasonal items...and yes, they are all square or cube shaped. Most of our offerings are inspired by Mexican pastries and pan dulce, and our wedding + custom cake menu includes Mexican flavor profiles inspired by our favorite snacks growing up in Southern Texas and California.

Cubes Baking Co. has connected with El Centro De La Raza's food bank coordinator to help reduce any food waste and food insecurity in the greater Seattle area. As an organization grounded in the Latino community, El Centro De La Raza's mission is to build unity across all racial and economic sectors, to organize, empower, and defend the most vulnerable and marginalized populations and to bring justice, dignity, equality, and freedom to all the people of the world.
